Oatmeal Egg White Pancakes

Pancakes are delicious, there is no doubt, but regular pancakes don't always work the best when you are dieting. Finding a healthier and better alternative without sacrificing the taste can be difficult, but this recipe works the best of all the ones I have tried!

Give try to these healthy, fluffy and nutritious pancakes made from egg whites, oatmeal, pumpkin puree and spices!




WHAT I LOVE ABOUT THESE PANCAKES ?



EASY AND FAST ! They are very easy and quick to make !

Making the batter for these pancakes takes less than 5 minutes. Pan Frying time is the same as a regular pancake so you can have a whole meal ready within 15 minutes :)

I usually let the pancake batter sit for 1 hour or overnight and cook it fresh when I need it. When you let it sit longer, the oat flour will absorb more moisture and make them fluffier.

As an active Bikini Competitor I closely watch my diet and work with the whole foods only, these pancakes have amazing macros, which lets me enjoy them all year long! There is no added sugar nor fat. Pumpkin Puree works great as a fat substitution, which makes pancakes more moist and soft.


VARIETY. You can make any type of pancakes you like. This recipe is versatile, you can add any of your favorite toppings and flavors!

You can add blueberries or chocolate chips to pancakes when you cook them.

For toppings I usually use Almond butter or Peanut Butter and SF Syrup (Walden Farms)

Blueberry topping is also one of my favorites - microwave 50grams of blueberries and pour it over the top of pancakes.


 

Oatmeal Egg-white Pancakes Recipe :

PREP TIME: 5 MINUTES COOK TIME: 10 MINUTES MAKES: 5 Pancakes

NUTRITION : 316 Calories | 40g Carbohydrates | 4 g Fat | 30g Protein |


Ingredients:

  • 50g Oatmeal Flour

  • 180g Liquid Egg Whites

  • 30g Canned Pumpkin Puree (no sugar added)

  • 1 teaspoons vanilla extract

  • 1 teaspoon cinnamon or pumpkin spice

  • 1/2 teaspoon table salt

  • 1 Tablespoon unsweetened Cocoa Powder

  • 1 Tablespoon Baking Powder

  • 2-4 Packets Stevia


Directions :


1. Make your Oatmeal Flour . You can either buy oatmeal flour or make it yourself. It is very easy process. Put quick plain oats in the blender and blend it on high for 3-5 minutes or until you get flour texture.




2. Make the Pancake Batter:

Mix all the dry ingredients first : Oatmeal Flour, Baking powder, Unsweetened Cocoa, Cinnamon, Stevia, Salt.

Mix in the remaining liquid ingredients : Pumpkin and Egg Whites





3. Stir Pancake batter thoroughly and let it sit for at least one hour!

This is very important step! The longer the pancakes sit the more moisture will be absorbed by oatmeal flour which will thicken the batter and give your pancakes the extra fluff. If you let the batter sit overnight you can add more egg whites for more liquid texture.




4. Spray the pan or griddle with Cooking Spray - Spray Coconut Oil works great !

Once the pan is hot, add about 1/3 cup of the batter to the pan for each pancake. You can add blueberries or chocolate chips to each pancake .

Cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges. Flip the pancakes for additional 1-2 minutes and serve.

* If your pancakes are browning too fast, lower your heat, I usually cook them on medium-low heat.




5. Pancake Toppings:

The Recipe's Macronutrients do not include any of the toppings.

You can top your pancakes with anything you like. My favorite toppings are hot blueberries. Measure 30-50g Blueberries and microwave them for 30 seconds, pour on the top and enjoy!

Sugar Free Syrup works very well also and it keeps the calories low.



Another very Tasty way to top these pancakes is topping each pancake individually .

Spread your pancakes on the plate and top each one with SF jelly, Nut Butter, Cut Up Fruit (apples, bananas, berries) and SF Syrup.
